avocado shrimp salad

This easy Shrimp Stuffed Avocado recipe is the best fast dinner recipe, all family can enjoy it. This recipe is light, healthy, delicious, low in carbs, and is ready in less than 25 minutes.

So easy to make it, even you are not good at cooking, or lazy to cook.

Ingredients.

Shrimp.

7 of Shrimp, small or medium.

Baking & Spices.

1/2 tsp Chili powder.

1 Salt and pepper.

Produce.

1 tbsp. Cilantro, leaves.

1/4 cup Tomato.

Oils & Vinegars.

Condiments.

2 tsp Lime juice.

Other.

1 Medium to large ripe avocado (halved and pit removed).

Instructions.

  • Heat olive oil in a medium pot over medium heat. Season the shrimp with chili powder and salt, then add to the pot.
  • Cook, stirring occasionally for about 3 minutes, or until the shrimp and pink become opaque.
  • Pour the lemon juice on the shrimp, turn over and peel.
  • Cut the avocado in half and season with salt and pepper.
  • Spoon the shrimp mixture evenly into each half of the avocado. Sprinkle with tomatoes and coriander and serve.
